Pre Heat Oven to 350
Muffin Recipe:
Combine these ingredients & mix:
1 entire can Organic Pure Pumpkin (not pie filling)
1 large egg
1 tbsp. real Vanilla
2 tbsp. Coconut Oil/MCT Oil
1 tsp. Baking Soda
2-3 tsp Pumpkin Pie Spice
2-3 tsp. Ground Cinnamon

2 pinches of salt (I love Crucial Four brand, see "Links" for

Mix & then add the following...
1 1/2 cups King Arthur unbleached all purpose flour *do not over mix!
Cream Cheese Recipe:
1 8oz brick of cream cheese
1 tsp. Organic Cane Sugar
1 egg yoke & 1 tsp. real vanilla
+ mix together in a different bowl
Using a cupcake pan, place unbleached parchment paper as liners, add a scoop of muffin mix, makes 12 muffins. Then add a dollop of cream cheese mix on top in center of the muffin mixture. Push the cream cheese down into the muffin mix slightly. Place in oven to bake for 24-25 minutes at 350.
Let cool & enjoy!

1 1/4 cup flour
2 tablespoons Corn Starch
Pinch salt I love Crucial Four brand, see "Links" tab for code to save)
Splash of vanilla
1 teaspoon baking soda
1/2 cup room temperature butter
1 egg
6 tablespoons brown sugar
6 tablespoons white sugar
1+ cup + chocolate chips
Bake at 350 10-11 minutes on a greased pan, we recommend RAM and Co. Tallow or unbleached parchment paper.
Makes 9-11 cookies w/ a scooper
RAM and Co. Pumpkin Loaf
1 1/2 c. All Purpose Organic Flour
2 tsp. Ground Cinnamon
1/2 tsp. Salt (I love Crucial Four brand, see "Links" tab for code to save)
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
1/4 tsp. Ground Nutmeg
1 tsp. Pumpkin Pie Seasoning
1 1/2 c. Organic Sugar
1/2 c. Organic Vanilla Yogurt
1 c. Organic Canned Pumpkin
2 eggs
Baking Instructions:
Preheat oven to 350°. Grease a loaf pan with tallow or coconut oil & set aside.
In a large mixing bowl, combine the sugar, yogurt, pumpkin and eggs. Mix thoroughly until blended. Add the dry ingredients to the pumpkin mixture; add flour, cinnamon, salt, baking soda, baking powder, nutmeg & pumpkin pie spice, into the mixing bowl with wet ingredients. Mix until completely incorporated & no lumps.
Pour into 1 greased bread pan and bake for 55+ minutes, or until a butter knife inserted comes out clean.
Let cool & enjoy warm with a spread of organic butter!
Sourdough German Pancakes
Ingredients:
6 eggs
1 cup whole milk
1 cup flour
Pinch of salt (I love Crucial Four brand, see "Links" tab for code to save)
Splash of Vanilla
1/2 cup sourdough starter or discard
Place 10x13 pan in cold oven with 5 tablespoons of butter. Turn oven on to 375. Once pre heated pour mixture into pan and bake for 30 minutes. Sides should rise and become golden brown.
Top with fresh seasonal fruit or organic maple syrup are some of our favorite options!
Sourdough Pretzel Bites
Pretzel Dough Ingredients
1/2 cup bubbly sourdough starter
3/4 cup lukewarm water
1/2 teaspoon white sugar
1 1/2 teaspoon salt (we use Crucial Four brand)
2 cups all purpose flour, + more for the countertop
Baking Soda Wash Ingredients
In a large mixing bow, combine all ingredients except flour. Mix lightly & then slowly add flour. In a stand mixer, mix dough for 5-7 minutes until it forms together in a smooth ball. It will be tacky but not sticky.
Lightly oil a glass bowl with Tallow and place the dough in the center of the bowl. I like to add a large plate to the top for my lid. Your going to let the dough rise. Depending on the temperature inside your home will determine how long it takes it rise, approx. 2-3 hours.
Once the dough has doubled in size you're ready to preheat your oven to 500 degrees. Lightly flour the counter surface you plan to use then gently dump the dough out onto the counter. I like to gently stretch the dough out to make a rectangle shape. Cut the dough into 4 even parts. From then cut 4-6 rows in each dough section, they should be 1/2 inch thick. Then cut the rows into small chunks & gently add them to your lined baking sheet.
Heat 1/2 cup of water to near boiling, then add in baking soda. It will make a few bubbles. Using a pastry brush, brush the baking soda water al over the uncooked bites. Then place the baking sheet in the oven for 8 minutes. Tops will start to turn golden brown. Add your favorite toppings and enjoy!
*warm these up later in the air fryer for a fresh crispy pretzel bite!
RAM and Co. Beef Bone Broth
RAM and Co. Beef Bone Broth may become your new staple in the fridge! I have 1-2 jars at all times in the fridge ready to be used for so many different things.
From making rice, boiling potatoes, bases of homemade soups, chili & more. If it calls for boiling, 9 times out of 10 I use our beef bone broth instead of water!
Simply place your thawed raw beef bones on a piece of parchment paper on top of a cookie sheet. Set your oven to 375 and add your raw bones along with any extra veggie scraps you have to give them a little roast. A few things I like to add are onions, garlic, carrots & celery.
Roast them all together for 30-45 minutes and then place it all in a crockpot 3/4 full of water. I like to put my crockpot on low and make the broth over a 24 hour period. Slow and steady helps to release all of the gelatinous goodness out of the bones and provide you with an exceptional nutrient dense product.
You'll never buy store bought bone brother in a box ever again!
Sourdough Tortillas
100 grams water
100 grams sourdough starter
mix these two ingredients together in a bowl to liquify the sourdough starter.
then add the following...
1 1/2 tsp salt
1 1/2 cup flour
4 tbs butter
+ any seasoning. I love adding rosemary!
Mix & fold well. Form dough into a log, cut log into small sections & let them rise with a light dry kitchen towel covering for 30 minutes.
Roll into balls, roll out on a floured counter to form your tortilla. Add butter to a warm pan & cook each side. Tongs work best to flip the tortilla, bubbles in the dough will form naturally as you cook.
Let cool & enjoy!
Sourdough Cheddar Herb Biscuits
2 1/4 cup flour
1 T baking powder
1/2 tsp baking soda
Pinch of salt (I love Crucial Four brand)
6 tablespoons cold butter
3/4 cup shredded cheese
2-3 pinches of herbs - Rosemary is a must for us!
In a separate bowl combine-
1 cup chilled sourdough starter
1/2 cup whole milk
Mix these 2 together and liquify starter. Once mixed add in the remainder of the ingredients.
Grease a baking sheet with pure RAM and Co. Tallow or unbleached parchment paper. Cut dough into 8 cubes and bake at 400 degrees for 13-15 minutes.
Let cool and serve warm.
Sourdough Chocolate Chip Cookies
1 3/4 cup flour
2 tablespoons Corn Starch

Splash of vanilla
1 teaspoon baking soda
1/2 cup room temperature butter
1 egg
1/2 cup active starter
6 tablespoons brown sugar
6 tablespoons white sugar
1 cup + chocolate chips
Bake at 375 11ish minutes on a greased pan, we recommend RAM and Co. Tallow (which you can grab from our SHOP) or unbleached parchment paper.
Makes 12 cookies w/ a ice cream scoop
Banana Bars
I came across this recipe a few years ago, made some minor adjustments & they’ve been a full house fav!
Ingredients:
1/2 cup softened butter
1-1/2 cups white sugar
2 eggs
1 cup sour cream, full fat
1t. vanilla
2 cups flour
1 t. baking soda
1/2 t. salt (we use Crucial Four brand)
2-3 medium ripe bananas
In a mixing bowl, cream the butter, sugar, vanilla, eggs, sour cream and baking soda. Once blended add in the bananas, mix and then lastly add in the flour.
I like to grease a 12 x 17 jelly roll pan with our Tallow or line it with unbleached parchment paper. Bake at 350 for 26 minutes or until the top is lightly golden brown.
Let cool while you make the icing. Do not frost until it's fully cooled!!
Icing:
8 oz Cream Cheese
1/2 c room temp. butter (do not melt)
2 T vanilla
2-3 c powdered sugar (depending on how sweet you want the sugar)
Serve and enjoy a bar before they are gone!
Banana Bread Loaf
2 1/2 cup flour
3 tsp. Baking Powder
1/2 tsp. Salt (we use Crucial Four, use RAMANDCO to save 10%)
3/4 cup sugar
1/3 cup soft butter
1 whole egg
1/2 cup milk
3 small ripe bananas
Preheat oven to 350, add all items except flour to mixing bowl & mix. Then slowly add in flour, mix well and pour into a greased loaf pan.
(I grease our pans w/ our RAM and Co. Tallow.)
Bake for 1 hour. Let cool, slice & spread butter on the slice of bread before eating.
*mix it up and add 1/2 a cup of chocolate chips, 1/2 a cup of nuts, 1/2 cup of raisins or sprinkle fresh/frozen blueberries on top before baking.
Fluffy Gelatin Marshmallows
3/4 cup Cold Water
3 scoops/30g of gelatin (we use Perfect Supplements brand, code: AUBREE10 to save)
6 tbsp organic maple syrup
*1tsp organic vanilla optional
1/2 cup boiling water
Add your cold water to a mixing bowl. Sprinkle the gelatin powder in the cold water, give it a few minutes to bloom.
Once bloomed, add the syrup and hot water as the mixer begins to mix the ingredients. Turn up the speed and allow to mix for 5-8 minutes until it's white, fluffy and looks like a whipped cloud. Pour into a greased pan that was greased with organic coconut oil. Place in the fridge to set up, this is a quick process so be sure to transfer the soft mixture into a pan as soon as it's mixed.
Cut into cubes and add one to your warm beverages & reap the health benefits!
